ORANGE JELLO SALAD
Orange jello salad is so pretty and just as good as it is pretty!
This orange jello salad is wonderful for any occasion. It is so colorful and would be great for Easter, birthday dinners, holidays of any kind or take it to any buffet or church gathering. My family loves this salad and I make it sometimes for just a regular Sunday meal when we all get together. It keeps well for several days refrigerated. You could double it for a crowd or even cut the recipe in half for just a few people. I don’t put the nuts or coconut in mine when I make it but you can add if you like coconut and nuts in salads. Orange jello salad will become a favorite for family and guests.
1 (16 ounce) container large curd cottage cheese
1 (3 ounce) box orange jello (do not make the jello)
1 (8 ounce) can pineapple tidbits, drained
1 (15 ounce) can mandarin oranges, drained (save some oranges if you want to decorate top of salad with them)
1 (8 ounce) cool whip
1 1/2 cups colored marshmallows
1/2 cup shredded coconut (optional)
1/2 cup chopped pecans or walnuts (optional)
Combine the cottage cheese (I don’t drain the cottage cheese) with the dry jello mix and stir. Add pineapple tidbits, mandarin oranges, cool whip, marshmallows, coconut and nuts. Stir well. Refrigerate for a couple hours before serving. Decorate with extra orange slices and marshmallows.
Makes 6 1/2 cups. Enjoy!
