MINI PIZZA MUFFINS
Mini pizza muffins are so much fun to make and to eat. Children love them as well as adults. Easy to make and perfect for any occasion!
These Mini Pizza Muffins make a wonderful appetizer for any gathering or tailgating party. They go great with beer, milk, soda or coffee for a snack. I make these mini pizza muffins and freeze them. They keep well for several days in the fridge. They can be reheated in the oven or microwave. You could double this recipe or if you like you can make large muffins in a regular muffin tin. Ingredients for Mini Pizza Muffins
1 1/2 cups all purpose flour
1/4 teaspoon salt
1/2 teaspoon baking powder
1/2 teaspoon baking soda
1/2 teaspoon dried basil or 1 teaspoon fresh basil
1/2 teaspoon garlic powder
1/2 teaspoon oregano
Pinch cayenne
1 egg
1 cup milk
1/4 cup finely chopped green pepper
1 cup chopped pepperoni slices
1/3 cup finely chopped onion
1/3 cup shredded mozzarella cheese
1/3 cup shredded parmesan cheese
In a large bowl whisk together the flour, salt, baking powder, basil, garlic powder, baking soda, oregano and cayenne. Stir in the egg and milk, green pepper, pepperoni slices, onion, mozzarella cheese and parmesan cheese with a spoon. Spray a mini muffin pan with cooking spray. I drop a tablespoon into each muffin. Bake in preheated 350 degree oven for 20 to 25 minutes. Makes about 30 mini muffins. Enjoy!
