HONEY BOURBON CHICKEN

Honey bourbon chicken is so easy to prepare and my family loves it.  You can serve it over rice or noodles and accompany with about any vegetable for a great meal. This makes a great weeknight meal when you don’t have much time and need something in a hurry.  Chicken is one meat I prepare all the time because my family loves it just about anyway you make it.  Add this recipe to your menu for a quick recipe you will go back to time and again.  Prepare it with other chicken pieces such as thighs and drumsticks for a change.

1 1/2 to 2 pounds chicken (I used chicken tenders in this recipe. Can use any kind of chicken pieces)
1/3 cup honey
1/3 cup bourbon
2 tablespoons Dijon mustard
1 tablespoon lemon juice
2 tablespoons butter or margarine, melted
1 tablespoon soy sauce
1 tablespoon brown sugar
 
Mix the above ingredients together and pour into a large ziploc bag.  Add chicken pieces to the bag, making sure to coat, and put in refrigerator several hours or overnight.  Pour chicken and sauce in two quart baking dish and bake in preheated 325 degree oven for  1 hour or until chicken is done.  Baste with sauce a couple times while chicken is cooking.   Serve with your favorite side dishes.  (Chicken is served over rice and broccoli in the photo)   Enjoy!
