These green pepper nachos are wonderful for anyone trying to make some healthy changes in their life. These are low carb.  My family loved this easy dish and you wont spend all evening in the kitchen cooking! Enjoy on your patio for a great summer meal.


Ingredients for Green Pepper Nachos-Low Carb

1 lb of ground beef (can use turkey or chicken)
1 (15 ounce) can of black beans, rinsed
4 green peppers
1/4 cup of green onion
1 can of green chilies
shredded cheese of choice
plain greek yogurt
2 tablespoons of Taco Seasoning




Preheat oven to 400 degrees. Slice green peppers into quarters (remove all seeds) and lay on greased baking sheet. Cook on 400 for 10 minutes.  In skillet brown your ground beef, add your taco seasoning and rinsed black beans. Once your peppers have cooked for 10 minutes, remove from oven and spoon mixture onto your peppers, top with onion, green chilies and cheese. Put back in oven for 10 more minutes on 400. Remove and top with salsa, Greek yogurt and any other toppings your love. The peppers were still pretty crunchy, if you want them soft, you may want to cook them longer. This is an easy low carb and gluten free recipe.
