TUNA SALAD WITH PINEAPPLE – LIGHT RECIPE

This tuna salad with pineapple is so refreshing. The sweetness of the fruit adds a wonderful flavor to this dish. Perfect for warm days, super easy to prepare and can be prepped early and enjoyed for days!

1 can of tuna
2 hard boiled eggs
1 teaspoon of sweet relish
1/4 cup of red onion
1 tablespoon of mayonnaise made with avocado oil (we like this one, it can be found at Kroger)
2 cups of romaine lettuce, chopped
2 fresh pineapple rings, cut to liking
1/2 cup of plantain chips (can also be found at Kroger or Walmart)

Mix first 5 ingredients together in a bowl to make your tuna salad! Toss on top of lettuce, add pineapple and plantains and ENJOY! This is super simple but absolutely delicious! The plantain chips add a great crunch. You can also leave out the lettuce and just enjoy with the chips. Gluten free and low carb, a  salad your entire family will love. Make your tuna up on a Sunday night and take this for lunch.
