CREAMY CUCUMBER SALAD

Cucumber salad is a summer favorite at my house.

Cucumber Salad

This cucumber salad is a quick and easy recipe you can throw together ahead of time because it needs to be in the refrigerator for 3 to 4 hours before serving anyway.  It is a very versatile recipe and if you have fresh garden vegetables they are great for this salad.  You might like to check out our pasta salad recipes for summer, too.

Cucumber salad can be made with different vegetables and spices to make it your own.

1 large cucumber, slit lengthwise and take out seeds by scraping downward with a spoon (I don’t peel my cucumbers but you can if you want)

1 cup grape tomatoes, (can slice in half or leave whole and can use regular or cherry tomatoes or whatever you have)

1/2 of a medium sized onion, peeled and cut into rings or chopped

1 clove of garlic, peeled and smashed

2 tablespoons mayonnaise

2 tablespoons sour cream

1/2 teaspoon black pepper or to taste

1/2 teaspoon salt

1/2 teaspoon white or cider vinegar

2 teaspoon white granulated sugar

In a large bowl combine cucumber, tomato and onion.  Whisk together the mayonnaise, sour cream, black pepper, salt, vinegar and sugar.  Combine with vegetables. Refrigerate for 3 to 4 hours to let flavors marry before serving.  Makes about 4 cups.  Enjoy.

Note:  You could add fresh radishes, zucchini or peppers to the vegetables.  You can add fresh or dried basil, oregano, thyme or parsley for seasoning or what you like best. I love adding fresh basil to mine.
