Clafoutis - The Southern Lady CooksClafoutis is a French dessert that is so easy to make I had to post it to the site.  This is a wonderful way to use up any fruit you need to use up or is over ripe.  You can make this fruit dessert and spend very little time.  I made this with two bananas and a cup of blueberries I needed to use before they ruined.  We had this clafoutis for breakfast with our coffee and there was about 1/4 cup left!  It makes a great dessert served with ice cream or whipped cream and is so versatile.  Don’t expect this to be like a cake because it is more like a dense custard and the batter is like a pancake or waffle batter.  I think it is best served warm. You could add raisins and nuts or use plums, blackberries, cherries, strawberries, peaches, raspberries or whatever you have on hand. Be sure to check out our easy fruit cobbler recipe, too.

Clafoutis is an easy French fruit dessert you and your family will love.

3 eggs

1/2 cup white granulated sugar

2 teaspoons vanilla extract

1/2 cup all-purpose flour

1 cup buttermilk (could use regular milk)

2 tablespoons butter, softened

2 bananas, mashed

1 cup fresh blueberries

Spray a 1 1/2 to 2 quart baking pan with cooking spray.  You could use an iron skillet or anything you can bake in.  Mix eggs, sugar and vanilla with a mixer.  Add flour, milk and butter in that order and continue mixing.  Place fruit in bottom of dish and cover with batter. Can sprinkle a little sugar on top before baking.  Bake in preheated 375 degree oven for 45 to 50 minutes.  Makes about 6 servings.  Enjoy.
