CHOCOLATE CHIP LOAF CAKE

Chocolate Chip Loaf Cake -The Southern Lady CooksChocolate chip loaf cake is a swirl cake with a chocolate topping.  This cake is delicious with coffee for breakfast or dessert.  It is good with ice cream or whipped cream on top, too.  This chocolate chip loaf cake keeps for several days in a cool spot or refrigerated.  You can heat in the microwave if you like it warm.  Children as well as adults will love this cake and if you like chocolate you won’t be able to resist it.  Click here to check out our recipe for delicious raisin bread pudding.

Chocolate Chip Loaf Cake:

1/2 cup butter or 8 tablespoons or 1 stick, softened

3/4 cup white granulated sugar

2 eggs

1/2 cup sour cream

1 teaspoon vanilla extract

2 cups all-purpose flour

1 1/2 teaspoons baking powder

1/4 teaspoon salt

Cream butter, sugar, eggs and sour cream and vanilla extract with a mixer.  Whisk together the flour, baking powder and salt.  Add to the creamed mixture and continue mixing.  Spray a 9 x 5 loaf pan with cooking spray and spread cake mixture in pan.

Swirl:

2 tablespoons brown sugar

1 teaspoon ground cinnamon

1/2 cup chocolate chips

1/2 cup chopped nuts, pecans or walnuts

Whisk together the brown sugar, cinnamon and chocolate chips.  Spread over cake mixture in pan.  Take a knife and swirl this into the cake mixture until totally incorporated.  Sprinkle on nuts.

Bake the cake for 45 to 50 minutes in a preheated 350 degree oven or until the center tests done.  Let cool for 10 minutes and remove from pan.  Drizzle on topping below.

Chocolate Topping:

1/2 cup chocolate chips

1/4 cup butter or 4 tablespoons

Melt the two ingredients together in the microwave for about 45 seconds on high or until it is smooth when you stir it. Drizzle over cake.

Makes 1 loaf cake.  Enjoy!
