CHEESY SAUSAGE MUFFINS
Cheesy Sausage Muffins are always a hit with my family.

Cheesy Sausage Muffins are always a good idea. This is a great breakfast muffin and one you will enjoy just anytime. They are delicious slathered with butter, wonderful with your morning coffee or as a snack with milk for the children. They are great to take to work for a late morning break. You really have your breakfast in a muffin! They keep well and the recipe could be doubled. You can also freeze these muffins and thaw the night before you intend to have them or just thaw in the microwave.
Cheesy sausage muffins will become a favorite breakfast treat.
1/2 pound pork sausage
1/3 cup green onions, chopped (can use regular onions)
1/3 green pepper, chopped
1/4 cup salsa (I use chunky salsa)
2 cups all-purpose flour
3 teaspoons baking powder
2 tablespoons sugar
1/2 teaspoon dry mustard
1 teaspoon garlic powder
1/2 teaspoon salt
1/4 teaspoon black pepper
2 eggs
1/4 cup or 4 tablespoons butter or margarine, melted
1 cup milk
3/4 to 1 cup shredded cheese of your choice (I use 4 Cheese Mexican)
Cook sausage, onion and green pepper in a skillet on top of the stove until sausage is cooked. Drain and set aside. In a bowl combine flour, baking powder, sugar, dry mustard, pepper, salt and garlic powder and whisk together. Add milk, eggs, salsa and melted butter and stir with a spoon. Using a spoon mix sausage mixture into the flour mixture. Spoon into a sprayed muffin tin, filling each cup about 3/4 full. Sprinkle shredded cheese on top of each muffin. Bake in preheated 375 degree oven for 25 to 30 minutes. Makes 12 muffins. Enjoy!

We are trying to not eat much meat. I used sausage substitute of the Morningstar sausage patties. It worked perfectly and no one could tell I had not used regular meat sausage. Great recipe
Made the muffins this morning, used a mixture of sausage & bacon, they are fantastic and easy to make. A great addition for our camping trips.

These little muffins sounds so great Think I will make them But let me ask do you have to use dry mustard,which i don’t have.
I use just the regular mustard turns out just fine and also if you dont have salsa i use rotel and they it works for me.
Sounds like a great way to start the day…yum.
