- 1/2 pound pork sausage
- 1/3 cup green onions chopped (can use regular onions)
- 1/3 green pepper chopped
- 1/4 cup salsa I use chunky salsa
- 2 cups all-purpose flour
- 3 teaspoons baking powder
- 2 tablespoons sugar
- 1/2 teaspoon dry mustard
- 1 teaspoon garlic powder
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 2 eggs
- 1/4 cup or 4 tablespoons butter or margarine melted
- 1 cup milk
- 3/4 to 1 cup shredded cheese of your choice I use 4 Cheese Mexican
Cook sausage, onion and green pepper in a skillet on top of the stove until sausage is cooked. Drain and set aside.
In a bowl combine flour, baking powder, sugar, dry mustard, pepper, salt and garlic powder and whisk together. Add milk, eggs, salsa and melted butter and stir with a spoon.
Using a spoon mix sausage mixture into the flour mixture. Spoon into a sprayed muffin tin, filling each cup about 3/4 full. Sprinkle shredded cheese on top of each muffin. Bake in preheated 375 degree oven for 25 to 30 minutes.
