Brown Sugar Banana Bars
Ingredients
- 1/2 cup of salted butter melted
- 1/2 cup of white granulated sugar
- 1/2 cup of brown sugar packed
- 2 teaspoons of vanilla
- 1 teaspoon of cinnamon
- 1 egg
- 1 cup of all purpose flour
- 1/2 cup of banana mashed (I used one banana)
- 1/2 cup of pecans chopped
Frosting Ingredients:
- 3 ounces of creamed cheese softened
- 2 tablespoons of butter softened
- 1/4 cup of brown sugar
- 3/4 cup of powdered sugar
- 1/2 cup of pecans chopped
Instructions
- Preheat oven to 350 degrees and spray an 8X8 baking dish. Combine butter, white and brown sugar, egg and vanilla and mix well. I just used a spoon.
- Add in flour, cinnamon and banana, stir until well mixed.
- Fold in pecans.
- Baked for 22-25 minutes until center is done. It may have a little moisture but that is okay. It took mine 25 minutes. Ovens vary.
- Let cool completely.
Frosting Instructions:
- For frosting, combine all ingredients, except pecans and mix with a hand mixer until well combined. Spread over banana bars and top with pecans.
- I store these in the fridge, they are great cold.

Is there no baking powder or anything to make it rise?
These are bars, they really don’t rise up to high.
My Granddaughter is Gluten intolerant, do you think Bob’s Red Mill 1 for 1 GF flour would work?
I haven’t tried it so I really cant say.
A great recipe, followed it exactly as written, easy to throw together and it is delicious! The consistency is almost like a brownie and the icing is rich but oh so good! This one is a keeper for me because just plain banana nut bread isn’t a favorite of mine, so this is a great recipe for your leftover bananas.
Should this recipe include soda and/or baking powder since you are using All Purpose flour? All of your recipes that I’ve tried are A-Plus and 5-Star!
The recipe is correct as written, it doesn’t include baking soda or baking powder. Thanks so much for the kind words!
If using a glass baking dish, should I lower the oven temp. to 325 degrees?
Yes, and you’ll probably need to increase the baking time by possibly ten minutes or so.
Can this be doubled for a 9×13 “glass baking dish, how long do you bake it for?
I have never tried doubling it, but see no reason why it wouldnt work. You would probably bake it about the same amount of time, but I would just keep checking the center until done.
