BANANA, BLUEBERRY BUTTERMILK PANCAKES
Banana, blueberry buttermilk pancakes are delicious.
Smother these banana, blueberry buttermilk pancakes with your favorite syrup, honey or sorghum and you have a wonderful breakfast treat for children and adults, too. My family loves these pancakes and I make them for breakfast often. This is a great way to use up bananas and blueberries you might have on hand. I love throwing different ingredients in pancake batter for a special treat. I have even added bacon to these pancakes and it turned out delicious.
Banana, Blueberry Buttermilk Pancakes
2 ripe bananas, chopped 1/2 cup blueberries, fresh or frozen 1 cup all-purpose flour 1 tablespoon sugar 1/4 teaspoon baking soda 1/2 teaspoon baking powder 1/2 teaspoon vanilla 1/4 teaspoon salt 1/2 teaspoon cinnamon 1 egg 3/4 cup buttermilk 1/2 stick butter or margarine Mix bananas, egg, milk, vanilla in a large bowl with a spoon. Add flour, sugar, soda, baking powder, salt and cinnamon. Fold in blueberries. Fry the pancakes in butter using a little each time. Don’t put all the margarine in the skillet at one time. (Note: I always fry pancakes in butter. I think it makes them so much better). I used a 1/4 cup measuring cup to measure the batter for each pancake. Makes 10 pancakes. Enjoy! Note: You don’t have to add the blueberries. The pancakes are great with just the bananas or you can add nuts. I like them with a handful of walnuts added, too.
