Banana, Blueberry Pancakes

These are delicious with smothered in butter and syrup.

Ingredients

  • 2 ripe bananas chopped
  • 1/2 cup blueberries fresh or frozen
  • 1 cup all-purpose flour
  • 1 tablespoon sugar
  • 1/4 teaspoon baking soda
  • 1/2 teaspoon baking powder
  • 1/2 teaspoon vanilla
  • 1/4 teaspoon salt
  • 1/2 teaspoon cinnamon
  • 1 egg
  • 3/4 cup buttermilk
  • 1/2 stick butter or margarine

Instructions

  • Mix bananas, egg, milk, vanilla in a large bowl with a spoon. Add flour, sugar, soda, baking powder, salt and cinnamon. Fold in blueberries
  • Fry the pancakes in butter using a little each time. Don’t put all the margarine in the skillet at one time. (Note: I always fry pancakes in butter. I think it makes them so much better).

Notes

I used a 1/4 cup measuring cup to measure the batter for each pancake. Makes 10 pancakes.
You don’t have to add the blueberries. The pancakes are great with just the bananas or you can add nuts. I like them with a handful of walnuts added, too.
