BACON CHEDDAR SCONES

Bacon cheddar scones are wonderful for breakfast, dinner or anytime.  Serve them for breakfast with coffee and your favorite jams and jellies or with any meal.  Bacon cheddar scones will go with anything and they are delicious.  The bacon and cheese along with the onions make these scones such a treat.  They keep well for several days and can be reheated in the microwave. Bacon cheddar scones are a delicious treat anytime.

5 slices bacon

2 cups all-purpose flour

1 tablespoon baking powder

1 teaspoon ground mustard

1/4 teaspoon salt

1/4 teaspoon black pepper

3/4 cup shredded cheddar cheese

1 stick butter or 8 tablespoons or 1/2 cup, softened

2 eggs

1/3 cup chopped onion

1/2 cup sour cream

Cook bacon, drain, crumble and set aside.  In a large mixing bowl whisk together the flour, baking powder, ground mustard, salt, pepper, shredded cheese and half the crumbled bacon.  Cut in butter until mixture resembles coarse crumbs.  Beat eggs in a small bowl with a fork, add eggs and onions along with sour cream.  Mix well with a spoon until dough is wet and forms a ball in the bowl.  Place dough on a sprayed baking sheet and press with hands into a round circle about 1/2 inch thick.  Sprinkle on remaining crumbled bacon and kind of press into dough.  Cut dough into 8 triangles.  (I use a pizza cutter to cut the dough).  Bake in preheated 400 degree oven for 20 to 25 minutes until browned on top.  Makes 8 scones.  Enjoy!
