Bacon Cheddar Scones

Ingredients

  • 5 slices bacon
  • 2 cups all-purpose flour
  • 1 tablespoon baking powder
  • 1 teaspoon ground mustard
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper
  • 3/4 cup shredded cheddar cheese
  • 1 stick butter or 8 tablespoons or 1/2 cup softened
  • 2 eggs
  • 1/3 cup chopped onion
  • 1/2 cup sour cream

Instructions

  • Cook bacon, drain, crumble and set aside.
  • In a large mixing bowl whisk together the flour, baking powder, ground mustard, salt, pepper, shredded cheese and half the crumbled bacon. Cut in butter until mixture resembles coarse crumbs.
  • Beat eggs in a small bowl with a fork, add eggs and onions along with sour cream. Mix well with a spoon until dough is wet and forms a ball in the bowl.
  • Place dough on a sprayed baking sheet and press with hands into a round circle about 1/2 inch thick. Sprinkle on remaining crumbled bacon and kind of press into dough.
  • Cut dough into 8 triangles. (I use a pizza cutter to cut the dough). Bake in preheated 400 degree oven for 20 to 25 minutes until browned on top.
