ANDOUILLE SAUSAGE AND BEANS – Crock Pot Recipe

Andouille sausage and beans is easy and delicious.

This recipe for andouille sausage and beans quickly became a favorite with my family.  We love anything that goes over rice but this would be good over pasta and potatoes or just eat it alone.  The andouille smoked sausage makes the recipe along with Cajun seasonings and garlic.  This makes a wonderful weeknight meal or double the recipe and make it for any gathering or tailgating event where you serve comfort food.  This keeps well for several days refrigerated and can be reheated in the crock pot or on the stove top.  You could make this on the stove top as well if you are in a hurry.  I like throwing it in the crock pot or slow cooker and for dinner at some of our cornbread muffins for a meal.

Andouille sausage and beans can be made in the crock pot or slow cooker or on the stove top.

1 (1 pound) package Cajun style andouille smoked sausage or regular smoked sausage

1 green pepper, chopped

1 medium onion, chopped

1/2 cup chopped celery (optional)

1/4 cup water

2 tablespoons butter or cooking oil or bacon drippings

1 (15.5 ounce) can red kidney beans, drained and rinsed

1 (15 ounce) can green lima beans, drained and rinsed

1 (14.5 ounce) can diced tomatoes, undrained

1 (8 ounce) can tomato sauce

1 teaspoon minced garlic

1/2 teaspoon Cajun seasoning (you can make your own using our recipe for Cajun seasoning)

salt and pepper to taste

In a skillet on top of the stove brown green pepper, onion, celery and sausage in butter or oil.  (I use bacon drippings for this).  Once browned add to a 3 quart crock pot or slow cooker along with water, kidney beans, lima beans, diced tomatoes, tomato sauce, garlic, Cajun seasoning, salt and pepper.  Cook on low for 4 to 6 hours or high for 2 to 3 hours.  Makes 6 to 8 servings.
