Double chocolate banana muffinsDouble chocolate banana muffins are wonderful with coffee for breakfast and as a dessert.  We absolutely love these double chocolate banana muffins split in half with a scoop of ice cream and then drizzle my hot fudge sauce recipe over the top.  Children will love these muffins as a snack with milk and they would be great in a lunchbox for a treat.

Double chocolate banana muffins are great for adults and children.

3/4 cup white granulated sugar

1 stick butter or 8 tablespoons or 1/2 cup, softened

2 eggs

1 cup buttermilk

1 teaspoon vanilla extract

2 cups all-purpose flour

1/2 cup 100% cocoa

1/2 teaspoon baking powder

1/2 teaspoon baking soda

1/2 teaspoon salt

1/2 cup mashed bananas

1/2 cup chocolate chips

1/2 cup chopped walnuts or pecans, (Optional)

Cream butter,  sugar and eggs with mixer.  Add in buttermilk and vanilla extract.  In another bowl whisk together the flour, cocoa, baking powder, baking soda and salt.  Combine the egg mixture with the flour mixture and mix well.  Fold in mashed bananas, chips and nuts with a spoon.  Spray a 12 cup muffin tin with cooking spray.  Fill cups about 3/4 full.  Bake in preheated 350 degree oven until centers test done or 25 to 30 minutes.  Makes 12 muffins.

I usually add a powdered sugar glaze to these muffins but they are good without the glaze, too.

Glaze for Muffins:

1 cup powdered sugar

3 to 4 tablespoons milk

Mix together with a spoon until thin enough to drizzle over cupcakes.  You can add more or less milk. Enjoy!

    The double chocolate muffine recipe is a winner. Actually, I made them triple chocolate by adding cocoa to your glaze and added a pecan half on top. Super recipe!
