PARMESAN BAKED CHICKEN
This recipe for Parmesan baked chicken is easy and good.
Just add a side dish and bread for a great meal. I love the taste of the Parmesan cheese baked with the Ritz crackers on this chicken. You could easily double this Parmesan chicken recipe if serving several family or friends. A great recipe to have on hand and one you will go back to time and again. This is one of our favorite chicken recipes for company or just a weeknight meal.
Parmesan baked chicken will quickly become one of your favorites.
1 to 2 pounds boneless, skinless chicken (Can use breasts or any chicken pieces you like)
1 sleeve Ritz crackers, crushed
1/4 cup Parmesan cheese, grated (the kind in the green can or fresh)
1 cup Oikos Organic Greek Yogurt, Honey Flavored (Could use plain yogurt or milk to dip the chicken, too)
4 tablespoons butter or margarine, melted
Put the Ritz crackers in a plastic ziploc bag and finely crush with a rolling pin. Add cheese to the bag and mix well. Dip chicken pieces in the yogurt and then in the crumb mixture. Place chicken in a sprayed casserole dish, drizzle melted butter over the chicken and bake in preheated 400 degree oven for 35 to 40 minutes until chicken is done inside. Makes 4 servings. I think you will love the ritzy cheesy taste of this chicken. I can eat it cold right out of the fridge. Enjoy!

Absolutely delicious!
I always run out of breading, do I doubled it along with the melted butter…and perfect.
I used Greek Vanilla Yogurt and put like 3T of honey in it. Glad I got a picture before all of it is gone.

I’ve made this twice and everyone has loved it! I have split the cracker mix in half and added Nashville hot chicken spices to one. Both the plain and the spicy are awesome. The chicken stays so moist and juicy.

about how many crackers in a sleeve?
Good question. I am wondering the same thing myself. I don’t believe that we can purchase them as sleeves in Canada.
I just googled it and it says 35 crackers.
Here in the states, they’re sold in boxes, not sleeves, but inside the box, they separate the crackers into the “sleeves” just to help keep them fresh. Several sleeves to a box. This recipe looks delicious! I’m making it today. 🙂
I will have to try this, I make a similar one, was my husbands favorite, dipped in beaten egg and melted butter not yogurt and instead of ritz crackers I used corn flake crumbs. very good.

This looks super Good and I would like to make it tonight for my hubby and I. I don’t have Greek yogurt on hand… can I use milk or egg and if so should I add any honey anywhere to the mix (the recipe calls foe Greek honey yogurt) Thanks so much!!!

I fixed ritzy parm chicken for 25 people and everyone raved! I did add some hot sauce to the yogurt. I didn’t want to add salt because of the sodium in the crackers and parm cheese. VERY easy to feed a big crowd. Baking chicken instead of standing over a hot BBQ worked for me.
