PEACHES AND CREAM MUFFINS

These muffins are so good and so easy to make. You can use either canned peaches or fresh peaches in the recipe.  Add some butter or preserves for a real treat at breakfast with coffee or as a snack anytime.

3/4 cup sugar
2 eggs
1 teaspoon vanilla extract
1/2 cup cooking oil (I use Canola)
3/4 cup sour cream
1 teaspoon baking soda
1/2 teaspoon nutmeg
2 cups all-purpose flour
1 (15 ounce) can peaches, drained and cut in pieces
Extra nutmeg, Optional
 
In a large bowl combine sugar, eggs, vanilla, cooking oil and sour cream.  Mix well with a spoon until smooth.  Add baking soda, nutmeg and flour and continue stirring.  Fold in drained peaches. Spray a 12 cup muffin pan and add muffin mixture.  Sprinkle each muffin with a little extra nutmeg.  Bake in preheated 400 degree oven for 20 minutes.  Makes 12 muffins.  Enjoy!

      Yes, I am sure you could Ginger. If you type blueberries into the search box on the recipe site there are lots of recipes using them on the site, too.

  2. I’ve only got self rising flour, would that be okay?

  3. OMgoodness…yes…they ..according to my neighbor…were deelish.
    I actually substituted a few ingredients…berry sugar ..(less)..for sugar, ginger orange marmalade + 1 Tbs oil..(touch less) for oil… and also used yogurt instead of sour cream…and I used an ice cream scoop..and it actually made 18, yummy, moist, full of peaches..deelish muffins…thank you for the recipe!!
