It’s the time of the year for apples and this is one of my favorite fall cake recipes.

If you like apples and butterscotch, you will love this cake!

1 1/2 cups oil (I use canola)
1 1/2 cups sugar
3 eggs
3 cups self-rising flour
1 teaspoon ground cinnamon
1 teaspoon vanilla extract
1/2 teaspoon nutmeg
3 cups apples, peeled and grated or in small chunks (I grate them on a hand grater  and I have used all kinds of apples)
1 cup walnut pieces (could use pecans)
1 cup butterscotch chips    
Preheat oven to 350 degrees.   Spray bundt pan or 9 x 13 cake pan with non-stick cooking spray.  Cream oil, sugar, eggs together.  Blend in flour, cinnamon, vanilla, and nutmeg.  Stir in apples, nuts, and butterscotch chips.   Bake 1 hour or until done.    This cake is good without frosting but can add the recipe below for Butterscotch Icing.
Butterscotch Icing or Frosting   
1 cup butterscotch chips
1/4 cup milk
2 tablespoons butter
1/4 teaspoon salt
2 cups confectionery sugar
Melt chips and butter in microwave about 60 seconds.  Add milk and salt and beat with wire wisk until smooth.  Beat in sugar till desired consistency.  Drizzle or pour over cake.

      There is no problem with pinning the recipes by clicking on the “pin button” under the recipe. They are not to be copied and pasted in full on the interest. You can always delete the pin if it is not correct and repin from here. You risk getting put off Facebook and Pinterest if you violate copyright laws and enough people report you for it.
