BROCCOLI, RAISIN SALAD

This is my very favorite thing to do with broccoli! I love this salad and it makes a great dish to take to any function. People always ask for the recipe.

2 cups fresh broccoli
1/2 cup green onion, chopped
3/4 cup seedless raisins
4 slices bacon, cooked and crumbled
1/3 cup shelled sunflower seeds
6 tablespoons mayonnaise
2 tablespoons cider vinegar
2 tablespoons sugar
1/4  teaspoon pepper
1/2 teaspoon salt
 
Cover and soak raisins with water till plump, drain.  Combine broccoli, onion, bacon, sunflower seeds, and raisins and set aside.  Mix the mayonnaise, vinegar, sugar, salt, and pepper.  Toss with salad, chill until served.  Makes about six servings. Enjoy!

  4. My favorite salad..We always add shredded cheddar and use slivered almonds..

  5. I make a salad like this but I add a little celery and Granny Smith apple. Instead of sunflower seeds I roast slivered almonds! It’s de-lish!

  7. Roberta–Thanks for the suggestion to blanch the broccoli. I have had Broccoli Salad before but did not care for the raw broccoli. I will try it again and blanch it.

    • If you don’t have time to blanch fresh broccoli, I use frozen broccoli florets and defrost them in the microwave until bright green. They will still be slightly cold like they were in the refrigerator and still crunchy. I did this once because I did not have time to go get broccoli from the store. Since then, I don’t mess with fresh except when broccoli is in season.

  11. Loved this salad! Served with our Memorial Day meal of pulled pork with slaw on buns, potato salad and baked beans. Was looking for something fresh and green to round out the menu and this was perfect. Not a bite was left….definite keeper. Just made a note to self to chop the broccoli a little finer next time…will blend better with other ingredients and the dressing. Thanks Judy and God bless our veterans!

  13. Love this salad, make mine w/red onion and either blue cheese dressing or balsamic vinegar dressing.

  14. I am sodium restricted so substitute dried cranberries for bacon and raisins. Works for my vegetarian family members, as well.

  15. Lightly blanch the Broccoli in hot water, drain and shock with ice or cold water. The slightly tenderized Broccoli is much easier to digest and to chew. I’ve made this for years and it was a restaurant favorite!!

  16. We made this at the gourmet restaurant I where I worked. We used broccoli florets, diced red onion, raisins and pecan pieces. The dressing was the same. People came from miles to buy this salad and they bought it by the quart. I just made some today using craisins instead of raisins. Equally delicious.

  17. I have had a variation of this salad using golden raisins and minus the bacon, it was really good! I bet it will be Great with the bacon added…Yum!

  21. This sounds so wonderful. Will go out tomorrow and get some Broccoli and make this salad. My husband loves sunflower seeds. This will. go over great with him.. Did what you said about copying , worked like a charm. Great recipes. I will follow you on Pinterest

  23. Love this recipe. I take it to every BBQ invite and it’s always a hit here in Missouri. Mine differs by two ingredients and I suggest you try it. I put halved cherry tomatoes and no scallions, but I will add them now cause they sound like a perfect addition!
