Have you ever wondered what to do with left over sour cream? This spice cake with sour cream frosting will solve your problem.1 1/4 cups brown sugar 1/2 cup butter or margarine, softened 3 eggs 1 3/4 cups all purpose flour 1/2 teaspoon baking powder 2 teaspoons baking soda 1/4 teaspoon salt 1 1/2 teaspoons cinnamon 1 teaspoon nutmeg 1 teaspoon all spice 3/4 cup sour cream 1 teaspoon vanilla 1/2 cup walnuts, chopped Preheat oven to 350 degrees. Spray 2 round cake pans. Cream sugar and butter till fluffy. Beat in eggs. Add remaining ingredients, mix well. Fold in nuts. Bake 30 to 35 minutes. Cool 10 minutes before removing from pans. Sour Cream Frosting 3 1/2 cups powdered sugar 1/2 cup butter or margarine, softened 1/4 cup sour cream 1 teaspoon vanilla Beat all ingredients together until reach spreading consistency. Spread between layers and over cake. We like this cake with a chocolate sauce or glaze poured over it. Below is the recipe for the chocolate sauce: 1/2 cup chocolate chips 2 Tablespoons butter or margarine 1/2 cup powdered sugar 4 or 5 tablespons milk Heat chocolate and butter in saucepan. Remove from heat, add sugar beat until of spreading consistency, then add milk gradually until mixture is pourable. This sauce is good over anything that you like a chocolate sauce on. I actually pour the glaze over the entire cake most of the time. Note: This cake is also wonderful with caramel frosting or cream cheese frosting. You can find these recipes under frostings.
