TOMATOES AND OKRA – Southern Style

Tomatoes and okra together is a delicious side dish.

My family loves this dish because it is so versatile and you can add meat to make it a main dish meal or have it as a side dish.  You can use fresh vegetables from the garden in summer or canned and frozen vegetables in winter and it is good either way.  Tomatoes and okra is good over rice, pasta, potatoes or even alone.  You could add shrimp, fish, sausage or chicken to make a meal and it is great for a busy weeknight.  Our favorite way to have this recipe is as a side dish served over rice with pork or chicken or even smoked sausage.  It is great with Cajun andouille sausage, too.

Tomatoes and okra is an easy Southern dish that goes with any meal.

3 slices bacon

1 cup chopped regular onion or green onion

1 (14.5 ounce) can diced tomatoes or 2 cups fresh chopped tomatoes (do not drain canned tomatoes)

3 cups sliced frozen okra or can use fresh okra

1/4 teaspoon salt

1/4 teaspoon black pepper

1/4 cup water or chicken broth

1/4 teaspoon Cajun seasoning, (optional) Check out our recipe for making your own Cajun seasoning.

1 teaspoon sugar (optional)

Cook bacon in skillet on top of the stove, remove from pan and set aside.  Brown chopped onion in bacon grease, then add tomatoes and okra, salt, pepper, water or broth, Cajun seasoning and sugar.  Bring to boil, reduce heat and simmer for 20 to 25 minutes.  Remove from heat and crumble bacon on top.  Makes 6 to 8 servings.  Enjoy!
