Tomatoes and Okra

This easy dish is wonderful served over rice.

Ingredients

  • 3 slices bacon
  • 1 cup chopped regular onion or green onion
  • 1 14.5 ounce can diced tomatoes or 2 cups fresh chopped tomatoes (do not drain canned tomatoes)
  • 3 cups sliced frozen okra or can use fresh okra
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/4 cup water or chicken broth
  • 1/4 teaspoon Cajun seasoning (optional) Check out our recipe for making your own Cajun seasoning.
  • 1 teaspoon sugar optional

Instructions

  • Cook bacon in skillet on top of the stove, remove from pan and set aside. Brown chopped onion in bacon grease, then add tomatoes and okra, salt, pepper, water or broth, Cajun seasoning and sugar. Bring to boil, reduce heat and simmer for 20 to 25 minutes. Remove from heat and crumble bacon on top.
