SPICY ROASTED SWEET POTATOES
Spicy sweet potatoes are roasted in the oven using spices and olive oil for a healthy treat. You will be surprised how good these spicy sweet potatoes really are. I use 3 sweet potatoes in this recipe and I can eat them all in a day. I keep going back to the kitchen and picking at them and snacking on them all day. I love sweet potatoes made this way. This makes a great side dish for just about any meat and especially pork. This is so easy to make, too. Be sure to check out our other recipes for sweet potatoes!
You can always double or triple the recipe to feed more people or cut in half for one person.
Spicy sweet potatoes make a healthy dish to add to your meal.
3 large sweet potatoes, washed, peeled and chopped in about 1 1/2 inch pieces
3 tablespoons olive oil
1/2 teaspoon dried oregano
1/8 teaspoon black pepper
1/2 teaspoon salt
1/2 teaspoon garlic powder
pinch cayenne (optional)
Wash, peel and chop sweet potatoes. In a large bowl whisk together the oil, oregano, black pepper, salt, garlic powder and cayenne. Toss the sweet potatoes in the oil. Spread sweet potatoes on a sprayed baking sheet and bake in preheated 400 degree oven for about 40 minutes. I turn them after 20 minutes. Makes 3 to 4 servings. Enjoy!
Tip: Want an easy way to peel and chop sweet potatoes? Put them in the microwave for about 2 minutes before roasting. Peel while still hot or warm.
