SPICY APRICOT CHICKEN
Apricot chicken is an easy recipe perfect for weeknights or anytime.
This Apricot Chicken is a great comfort food. Just add a side dish or salad for a quick and easy meal/ My family loves this spicy apricot chicken and I make it often. You might also like our recipe for oven-baked pork chops.
Apricot chicken will become a favorite!
4 boneless, skinless chicken breasts, thawed or frozen 1 teaspoon salt 1/2 teaspoon coarse ground pepper (can use regular ground pepper) 1 cup Apricot preserves 1/2 cup honey 1 package dry onion soup mix 1/4 teaspoon ginger 1/4 teaspoon ground cloves 1 teaspoon Dijon mustard Rub salt and pepper into chicken breasts and place into a casserole dish. Mix together remaining ingredients in a bowl and pour over chicken. Cover with lid or Reynolds wrap and bake in preheated 350 degree oven for 1 hour. Serve over rice. Enjoy! Note: This could also be made in the crock pot or slow cooker. Just cook on high for 4 hours or low for 6 hours.

OMGosh, this chicken is good!! The wonderful smells coming from the oven as it cooked had my boyfriend drooling.. He practically scarfed it down as soon as I took it out of the oven! Big big hit 😉
I used apricot ‘Simply Fruit’ as that’s what I had on hand, and I left out the added salt since the soup mix is so salty & we’re trying to cut back. I also only used half the honey called for.. And it was still absolutely DEVINE served over rice, as suggested. This recipe is a keeper. Thank you so much for sharing it!!
