SOUTHWESTERN HOMINY SKILLET

This Southwestern Hominy Skillet is the perfect weeknight meal. It takes 30 minutes from start to finish and makes 6-8 servings. I love hominy so this is a dish I make a lot.

 

Ingredients for Southwestern Hominy Skillet

1 pound of lean ground beef

1/2 cup of diced red onion

1 can of black beans drained

1 can of dark red kidney beans, drained

2 cups of Juanita’s Mexican Hominy (you can use regular hominy)

1 can of Rotel Lime and Cilantro tomatoes, drained

1 packet of low sodium taco seasoning

2 cups of shredded Cheddar Cheese

Avocado slices and sour cream

In a skillet on top of the stove, fry the lean ground beef and onion. Drain off any grease. Add all the remaining ingredients and cook on medium heat for 15-20 minutes. Add cheddar cheese to the top of the dish and let it melt.

Serve in a bowl with avocado slices and a spoonful of sour cream on top. This skillet it dish is very versatile. You can serve over rice or with tortilla chips. We love that it is so easy and the hominy makes this southwestern dish a bit different. This skillet meal makes 6-8 servings.
