Shoepeg Corn Dip - TSLC

My family loves dip.  I make it a lot and this Shoepeg Corn Dip is one of our favorites.  I made this over the weekend and thought I had the recipe on the website but realized it was not.  This dip is addictive!  I can eat it for a meal and that is just what I did yesterday.  It was my lunch.  I can’t get enough of it when I make it.  That’s why I make a lot at one time.

Shoepeg corn dip is great for any event or occasion.

2 (11 ounce) cans white shoepeg corn, drained
1/4 cup chopped onion (could use green onion)
1/4 cup chopped green pepper (can use red pepper or chili peppers)
1 cup sour cream
1/2 cup mayonnaise
1 tablespoon dried parsley
1/4 teaspoon black pepper
salt to taste
1/4 cup grated or shredded parmesan cheese
1 cup Mexican shredded cheese (Can use cheese of your choice)
Pinch of cayenne or few drops of hot sauce

Mix all ingredients together and refrigerate several hours or overnight before serving.  Serve with scoops, tortilla chips, crackers, etcs.  This makes about 4 cups of dip and will keep in the refrigerator for several days.  Enjoy!

Note:  Shoepeg corn is a small white corn that comes in a can. They have it in every grocery store in Kentucky. Walmart and Kroger carries it here. You don’t cook it for this recipe. You just drain and add to other ingredients.

  3. I have another recipe using shoepeg corn and I haven’t been able to find any in a couple of years. Have tried WalMart, Kroger – just can’t find any

      I get it at Kroger and Walmart. You have to really look for it. I know I did the first time I got it. They both have it here.

  4. I love this corn dip. I have been making a version of this for years. Next time I will add the Parmesan cheese and the green peppers. Keep the recipes coming I really enjoy them.

  6. North Carolina has shoepeg corn “Green Giant” the can is small. I think it is the best corn. I use this corn in a lot of dips.

    The most common brand of shoepeg corn is “Green Giant”. It is much like WHITE kernel corn, with very little liquid. If you have to subsitute white kernel corn for shoepeg, be sure to drain-off as much liquid as you can.
