ROASTED SWEET POTATOES
Roasted sweet potatoes are easy to make and a great side to any meal.

Roasted Sweet Potatoes
2 large sweet potatoes, peeled and cut into chunks 2 tablespoons butter or margarine, melted 3 tablespoons honey 1/2 teaspoon cinnamon 1/2 teaspoon ground mustard 2 tablespoons oil (I use Canola) 1/2 teaspoon salt 1/4 teaspoon pepper Mix all ingredient together in a large bowl with a spoon or whisk. Add sweet potatoes and toss to coat. Spread evenly on a baking sheet covered with Reynolds wrap. Cook in preheated 400 degree oven turning a couple times to keep from burning for 40 to 45 minutes. Can sprinkle with more salt. Makes 3 to 4 servings.
