Green Tomato Muffins with Cheese

These green tomato muffins with cheese are so good!  My family loves green tomatoes, so of course, these are a huge hit.  If you have green tomatoes, these little treats are well worth the effort.  They make a great addition to any meal.

Ingredients Needed for Green Tomato Muffins with Cheese:

Chopped green tomato

Honey

Milk or Buttermilk

Egg

Oil (I use Canola)

Shredded or grated cheddar cheese

Salt

All-purpose flour

Baking powder

Green Tomato Muffins with Cheese

These Green Tomato Muffins are a great way to use up green tomatoes.

Ingredients
 

  • 2 cups green tomatoes chopped
  • 3 tablespoons honey
  • 3/4 cup milk can use buttermilk
  • 1 egg
  • 1/2 cup oil I use Canola
  • 3/4 cup shredded or grated cheddar cheese
  • 1/2 teaspoon salt
  • 2 cups all-purpose flour
  • 1 tablespoon baking powder

Instructions
 

  • In a large bowl combine tomatoes, honey, milk, egg, salt, cheese, and oil. Mix with a spoon. Add flour and baking powder to mixture. The batter will be lumpy
  • Spray or grease a 12 cup muffin pan or use paper liners. Fill cups about 3/4 full. Bake in preheated 400 degree oven for 25 to 30 minutes until brown on top.

  4. These turned out very light and delicious! I only had shredded Parmesan cheese and it paired wonderfully! Next, I will try some Monterey Jack cheese with sautéed red onion! Great basic recipe that can be changed up many ways. Thank you for sharing!5 stars

    I trued them last year and they are good . I got to thinking of them tonight and went out to my garden and got myself some green tomatoes so tomorrow morning I’m going to mack some. And I’m going to add a little veg flakes and icsgarlic this time. They are very good5 stars

  8. I baked these up. Added more honey. I think 400 is too high. Try 350 because mine were done in 15 minutes at 400.

    I made these using half whole wheat flour and half white flour. They are so yummy. They remind me of baking powder biscuits, but with way less work. I love them!!5 stars

    I made these last night, I thought they were good, I did put some chopped green onions in them, I thought they needed some herbs or spices. Next time I will try by adding diced green chilies or pickled jalapenos for some kick.
    Overall, this is a keeper.
    I am glad that there are more recipes than fried green tomatoes or green tomato pie.3 stars

    I WOULD LOVE TO MAKE THESE BUT THERE WOULD BE QUITE A FEW LEFT OVER. WOULD THEY FREEZE WELL, DO YOU THINK?     I HAVE SOME GREEN TOMATOES IN THE FREEZER I AN GOING TO THAW THEM OUT AND MAKE THESE LITTLE BABYS…THANK YOU SO MUCH ,,,,YOU CAN HAVE GREEN ALL YEAR LONG JUST SLICE THEM,AND PUT ON COOKIE SHEET AND FREEZE THEM .tHEN JUST PUT THEM IN ZIP LOCK FREEZER BAGS..I GAVE SOME TO MY DAUGHTER IN VIRIGINA,SHE SAID THEY WERE AMAZING…..

  21. wonder what they would taste like using cornmeal mix instead of flour??? I might give that a try, I like cornbread style muffins better than flour cake like…..
