FRUIT COCKTAIL LUNCH BOX CAKE
Fruit cocktail lunch box cake is an old-fashioned recipe that has been around for a long time. There are several different varieties of this cake and like the name, they were made for children to carry in their lunch boxes. It is a great cake to experiment with and add your own touch. This fruit cocktail lunch box cake is easy and quick to throw together and makes a great dessert or after school snack or lunch box treat. I love this cake with coffee in the mornings. Fruit cocktail lunch box cake is an old-fashioned classic your family will love.
2 1/4 cups all-purpose flour
2 teaspoons baking soda
1/2 teaspoon salt
3/4 cup brown sugar
2 eggs
4 tablespoons butter or 1/4 cup, softened
1 (15 ounce) can fruit cocktail, undrained
1 teaspoon vanilla extract
3/4 cup chocolate chips
1/2 cup chopped nuts, pecans or walnuts
1/2 cup raisins, (optional)
1/2 cup shredded coconut, (optional)
Whisk together the flour, baking soda and salt in a bowl. Cream the eggs, brown sugar, vanilla extract and butter with a mixer. Combine with flour and continue mixing until all ingredients are wet. Fold in fruit cocktail and juice with a spoon. Spray a 9 x 13 baking pan with cooking spray and spread mixture on bottom of pan. Sprinkle on raisins, coconut, chocolate chips and nuts. Bake in preheated 350 degree oven 30 to 35 minutes until center tests done. Enjoy!
