- 2 1/4 cups all-purpose flour
- 2 teaspoons baking soda
- 1/2 teaspoon salt
- 3/4 cup brown sugar
- 2 eggs
- 4 tablespoons butter or 1/4 cup softened
- 1 15 ounce can fruit cocktail, undrained
- 1 teaspoon vanilla extract
- 3/4 cup chocolate chips
- 1/2 cup chopped nuts pecans or walnuts
- 1/2 cup raisins (optional)
- 1/2 cup shredded coconut (optional)
Whisk together the flour, baking soda and salt in a bowl. Cream the eggs, brown sugar, vanilla extract and butter with a mixer. Combine with flour and continue mixing until all ingredients are wet. Fold in fruit cocktail and juice with a spoon.
Spray a 9 x 13 baking pan with cooking spray and spread mixture on bottom of pan. Sprinkle on raisins, coconut, chocolate chips and nuts. Bake in preheated 350 degree oven 30 to 35 minutes until center tests done.
