Crock Pot Stew Meat and Kidney Beans

Crock pot stew meat and kidney beans is an easy recipe and good comfort food.   You could use just about any meat such as a roast or round steak.  I think chicken would even work in this dish. This is great served over rice or pasta or even potatoes.  Cornbread is always good served with this dish, too.

Crock pot stew meat and kidney beans makes an easy weeknight meal.

1/2 pound dried red kidney beans

1 cup water

2 cups chicken broth

3 carrots, scraped and cut in bite-sized pieces

1 small onion, peeled and chopped

1 to 1 1/2 pounds beef stew meat

2 tablespoons cooking oil

1 (14.5 ounce) can diced tomatoes, undrained

1/2 teaspoon salt

1/2 teaspoon black pepper

1/4 teaspoon garlic powder

1 teaspoon dried oregano

1/4 teaspoon thyme

1 bay leaf

Shredded cheese for garnish

Brown stew meat in cooking oil on top of the stove.  Add to crock pot along with remaining ingredients.  Cook on low for 6 to 7 hours or high for 3 to 4 or until meat is tender. Remove bay leaf.  Serve over pasta, rice or potatoes. Garnish with your favorite shredded cheese.   Makes about 8 servings.  Enjoy!
