1 (2 1/2 to 3 pound) pork loin tenderloin
1 large onion, peeled and sliced into rings
1 (4 ounce) can green chilis, drained (optional)
1 medium green pepper, sliced in rings (optional)
1 cup chicken broth
1 (14.5 ounce) can diced tomatoes, undrained
3 tablespoons brown sugar
1 teaspoon chili powder
1 teaspoon cumin
1/4 teaspoon black pepper
1/4 teaspoon garlic powder
1/4 teaspoon salt

Place tenderloin in bottom of 3 quart crock pot. Put onion rings, green chilis, green pepper on top of tenderloin. Whisk together the chicken broth, diced tomatoes, brown sugar, chili powder, cumin, black pepper, garlic powder and salt in a bowl. Pour over tenderloin. Cook on low for 7 hours or high for 3 1/2 hours or until meat it tender. Makes 6 to 8 servings.

Note: We like this with just the onion rings on top of the tenderloin and without the green pepper and green chilis but I do add all the spices, tomatoes and chicken broth. It is good either way and smells wonderful while cooking.
