CREAMY RICE PUDDING

Creamy Rice Pudding-The Southern Lady CooksCreamy rice pudding recipe made on the stove top is quick, easy and delicious.  You will make this creamy rice pudding over and over for your family.  I can’t leave this pudding alone when I have it in the refrigerator.  It is great heated or cold.  You could double or cut in half the recipe.  This pudding keeps in the refrigerator for several days. Be sure to check out my recipe for vanilla sauce.  It is wonderful to serve over this pudding.  I love this pudding to have during the day when I am craving something sweet.  It makes a great dessert.  Sprinkle on some nuts for an added treat.  If you like rice pudding, you will love this recipe.  This rice pudding is good for breakfast, too.  When I was a child we loved rice pudding for breakfast!  You might also like my recipe for baked pineapple rice pudding.

Creamy rice pudding is good anytime.

1 cup long grain rice, uncooked

1/2 cup white granulated sugar

1/2 teaspoon salt

2 cups milk (I use 2%)

1 cup heavy whipping cream

1 teaspoon vanilla extract

Nutmeg or cinnamon

1 cup raisins, (optional)

Add rice, sugar, salt, 2 cups regular milk and the 1 cup whipping cream to a medium saucepan on top of the stove.  Cook on medium or high just until you see bubbles start to form in the mixture.  Turn burner to low, cover and let cook for 20 minutes stirring two to three times.  Remove from heat, add vanilla extract and raisins.  Sprinkle on nutmeg or cinnamon to taste.  Rice will become thicker as it cools.  Makes about 6 servings. Enjoy!

Ingredients

    Will it make a difference if I remove the cover once it is removed from the heat? About how long until it begins to thicken?

      You can remove the cover. It should thicken once it is cooled.
