CINNAMON SWIRL COFFEE CAKE
Cinnamon Swirl Coffee Cake is delicious.
You will make this cake over and over again to serve your friends and family with coffee. It is made with my homemade cinnamon chips. You could use regular store bought cinnamon chips but they can be hard to find and are not as good in baked foods. That is my opinion. Cinnamon swirl cake is wonderful for dessert for holidays or just anytime you want to serve a special treat. I love it for breakfast! The little bursts or cinnamon from the chips make this cake special and if you like cinnamon you will love this cake.
Cinnamon Swirl Coffee Cake
1 1/2 sticks butter or 12 tablespoons or 3/4 cup, softened
1/2 cup white granulated sugar
2 eggs
1 cup sour cream
2 teaspoons vanilla extract
2 cups all-purpose flour
1 teaspoon baking powder
1 teaspoon baking soda
1/4 teaspoon salt
1/2 cup cinnamon chips
Swirl for Cake:
1/2 cup brown sugar
2 teaspoons ground cinnamon
Cream butter, sugar and eggs with mixer. Add in sour cream and vanilla. Whisk together flour, baking powder, baking soda and salt in a separate bowl. Combine with creamed mixture and continue mixing until all ingredients are wet. This will be a stiff mix. Fold in 1/2 cup of cinnamon chips with spoon. Spray a 10 inch bundt pan with cooking spray and spread mixture evenly in pan. Combine the brown sugar and cinnamon and spread on top of the cake. Cut the brown sugar swirl into the cake mixture with a knife until combined and all ingredients are wet. Bake in preheated 350 degree oven 55 to 60 minutes until center tests done. Let cool 10 to 15 minutes before removing from pan. Add glaze below. Makes 1 bundt cake. Enjoy!
Glaze for Cinnamon Swirl Cake:
3/4 to 1 cup powdered sugar
5 to 6 tablespoons milk
Combine and beat with spoon until smooth. Can add more or less milk to get consistency you desire for your cake. Pour or drizzle over completely cooled cake.

Would this work being baked in two loaf pans?
You can give it a try! I’ve never made it that way but it may work.

Possible to freeze?
I think this cake would freeze ok but have not tried freezing it.
How many servings?
I think that would depend on what size you cut the pieces, Sharon.
Awesome coffee cake especially if you are cinnamon fanatics like my husband and me. Delicious! Never heard of cinnamon chips before but they were easy to make and tasted wonderful in the cake.
