Easy Chicken Nuggets - The Southern Lady Cooks

Chicken Nuggets with Homemade Ranch Dressing is a main dish or for snacking during ballgames or while watching movies.  The ranch dressing is great with lots of meats and chips, too. We love chicken nuggets and I sometimes serve them as an appetizer when family or friends visit.

Chicken nuggets and homemade ranch dressing is a great recipe anytime.

Chicken Nuggets

1 pound boneless, skinless chicken cut into bite sized pieces (can use chicken breasts, chicken fingers or whatever pieces you like)

1 cup all-purpose flour

1/2 teaspoon paprika

1/2 teaspoon ground mustard

1/2 cup plain bread crumbs

1/4 teaspoon black pepper

1/2 teaspoon salt

1/2 teaspoon garlic powder

Pinch cayenne, Optional

1/4 cup cooking oil

2 eggs

Cut chicken into bite sized pieces and set aside.  Whisk together the flour, paprika, mustard, bread crumbs, black pepper, salt garlic powder and cayenne in a bowl.  In another bowl, beat the eggs until smooth.  Heat cooking oil in skillet.  Dip chicken pieces in flour mixture, then in beaten eggs and in flour mixture again.  Make sure they are well coated.  Cook six to seven minutes turning if needed.  Remove with slotted spoon and drain on paper towels.  Makes about 4 servings.

Homemade Ranch Dressing

1/2 cup buttermilk

1/2 cup sour cream

1/4 cup mayonnaise (could use Miracle Whip)

1 teaspoon dried parsley (could use fresh parsley)

1/2 teaspoon dried dill weed

1/2 teaspoon garlic powder

1/4 teaspoon black pepper

1/2 teaspoon salt

1/2 teaspoon dried chives (could use fresh chives)

Whisk together all ingredients and refrigerate for 2 to 3 hours.  Makes about 1 1/4 cups dressing.  Will keep in the refrigerator for several days.
