CHICKEN NOODLE CASSEROLE

Chicken noodle casserole is an old-fashioned dish that my family loves! My family loves a good casserole and this one is definitely a favorite. I’ve made this dish using chicken and turkey and we love it both ways. I believe this recipe makes the perfect weeknight dinner. I’ve also taken it to numerous potlucks and come home with an empty bowl! People rave about the cracker topping.
Ingredients needed for Chicken noodle casserole
Chicken or turkey, cooked and chopped
Egg noodles
Onion, chopped
Cream of mushroom soup (check out our recipe to make your own creamed soups)
Cream of chicken soup
Sour cream
Black pepper
Salt
Sliced mushrooms, drained
Cheddar cheese, shredded
Cheese crackers or Ritz cracker crumbs
Butter or margarine, melted
Slivered almonds, Optional
You can easily use rotisserie chicken in this casserole to make it even easier. We have also received comments where people used canned chicken. It’s whatever works for you. We usually just boil some chicken breast and cut it up, however just use what works for you!
Recipe Notes: This dish reheats well if you happen to have leftovers. This recipe could easily be halved for two people. You could also try this dish with ham.

Chicken Noodle Casserole
Ingredients
- 4 cups chicken or turkey cooked and chopped
- 4 cups egg noodles uncooked
- 1/4 cup onion chopped
- 1 10 3/4 ounce can cream of mushroom soup (check out our recipe to make your own creamed soups
- 1 (10 3/4 ounce can cream of chicken soup
- 3/4 cup sour cream
- 1/4 teaspoon black pepper
- 1 teaspoon salt
- 1 ( 4 ounce can) sliced mushrooms drained
- 1 cup cheddar cheese shredded
- 1 cup cheese crackers (cheezits) or Ritz cracker crushed
- 2 tablespoons butter or margarine melted
- 1/4 cup slivered almonds Optional
Instructions
- Cook noodles according to directions on the box and drain. Combine cooked chicken and noodles and put in 2 quart baking dish. Combine onion, mushroom soup, chicken soup, sour cream, pepper, salt, and mushrooms. Add to chicken and noodles.
- Mix shredded cheese and cracker crumbs together with butter and spread over casserole. Sprinkle almonds on top. Bake in preheated 350 degree oven for 35 to 40 minutes.

Could this be made with just the cheese on top. I am not a lover of cracker crumbs, Pablo, corn flakes, etc.?
Of course, you could easily leave the crackers off.
We enjoyed this casserole! However I have one question. When you’re adding the sauce mix to the chicken and noodles do you leave it on top of it that or do you mix it all together with the chicken and noodles? Because I wasn’t sure, Today I just added it on top of the chicken & noodles & some noodles were a little dry so I had to mix the sauce into it on my plate.
You can mix it all together.

You don’t prepare the soup, you just pour if over the chicken in the crock pot. Enjoy!

I make the same thing but instead of sour cream I use ricotta cheese
Mom used to fix something similar to this but it didn’t have any cheese or mushrooms in it. And instead of cracker crumbs on top, she used cornflakes! I may have to try this, sounds yummy!

I would also add frozen peas and alittle chopped celery but you could clean out refrigerator too lol
Made this for dinner last night with left over turkey. My entire family loved it!! The smell when taken out of the oven was wonderful. Will be a go to recipe for left over turkey and chicken. The almonds on top adds so much. Thanks for this recipe!!!

been making it like this for years just done use mushrooms of any kind or the almonds.allergic to mushrooms and I don’t eat nuts. could be why I don’t use them lol
