BANANA BEIGNETS – A SOUTHERN TREAT

These Banana Beignets are a great twist on a classic! Start your day with this wonderful treat.

Beignets have been a Southern treat for years.  If you are in New Orleans don’t ever miss having some of their beignets and coffee in the French Quarter.  Banana beignets are easy and delicious.  Make these anytime you want a treat to go with coffee and serve to friends and family.  I never have any of these banana beignets left over.  Grownups and children love this recipe.  This is a good way to use up bananas, too.  The more powdered sugar you sprinkle on the better!  Whenever I make these banana beignets I cannot leave them alone.  I think they are one of the best sweet breakfast foods ever.  Your family will love them.  A great recipe project to make with your children and grandchildren.

Ingredients for banana beignets:

1 cup all-purpose flour

2 teaspoons white granulated sugar

1 teaspoon baking powder

1/2 teaspoon ground cinnamon

1/4 teaspoon salt

1/2 cup milk

1 egg

2 bananas, peeled and mashed

1 teaspoon vanilla extract

1 cup cooking oil (I use Canola)

Whisk together flour, sugar, baking powder, ground cinnamon and salt in a bowl.  Add milk, egg, mashed bananas and vanilla extract.  Stir to wet all ingredients with a spoon.  Heat the oil in a skillet on top of the stove until hot, drop in beignet mix by tablespoons, cook on each side until brown.  Remove with slotted spoon and drain on paper towels.  Sprinkle on lots of powdered sugar.  Makes about 20 beignets.  Enjoy!
