Pineapple sausage baked beans is an easy recipe and so good.

Pineapple Sausage Baked Beans

This recipe is wonderful to take to any holiday event or gathering.  It would be great for tailgating, a cookout or when having a barbecue.  You could do this recipe in the oven, microwave or the crock pot. The recipe can be doubled if feeding a group of people or just make it for an easy weeknight meal on a busy day.  It keeps well refrigerated and is good reheated in the oven or microwave. I like having this for a quick lunch in the summer months with a glass of sweet tea!  You might also like to check out our recipe for potato salad for a crowd.

Pineapple sausage baked beans are so easy to throw together.

2 (15 ounce) can pork-n-beans, drained

1 (20 ounce) can pineapple chunks, drained

1 (24 ounce) bag Lit’l Smokies or cocktail sausages

1/2 cup brown sugar

1/2 cup chopped green onions (can use regular onion)

1 tablespoon yellow mustard

1/3 cup barbecue sauce

Combine all ingredients and bake in preheated 350 degree oven for 35 to 40 minutes.  If using the crock pot, cook on low for about 4 hours or high for about 2 hours.  Makes 6 to 8 servings.  Enjoy!

Note:  I use Sweet Baby Ray’s barbecue sauce.  You could also add your favorite spices to this dish such as a teaspoon of chili powder, black pepper, cumin, minced garlic, etc.
