Cajun pork tenderloin is a great main dish recipe.

Cajun pork tenderloin

We love Cajun pork tenderloin for dinner and the leftovers make wonderful sandwiches.  Serve this roast with a couple side dishes and a salad for a delicious meal your friends and family will love.  If you want to shred the leftovers, add more barbecue sauce, heat and serve on hamburger buns for another quick meal.  You could double this recipe if you want to cook more than one tenderloin at a time.

Cajun pork tenderloin is an easy way to make pork tenderloin in the oven.

1 (2 to 3 pound) pork tenderloin roast

1 tablespoon brown sugar

2 teaspoons Cajun seasoning (I use my recipe for homemade Cajun seasoning)

1/4 teaspoon salt

Pinch black pepper

Barbecue sauce (I use Sweet Baby Rays but you can use what you like)

Combine the brown sugar, Cajun seasoning, salt and pepper.  Rub all over the pork roast.  Spread two sheets of aluminum foil on a baking sheet (one on top of the other) Add the roast and sprinkle your favorite barbecue sauce on the top.  I don’t spread the sauce because I don’t want to ruin the rub on the roast.  Fold the foil to cover the roast.  Bake in a preheated 275 degree oven for about 45 minutes to one hour or until the roast reaches 145 degrees internally on a meat thermometer.  Using a thermometer is best because the size of your roast will vary.  Remove from oven and add a little additional barbecue sauce to the top of the roast and put under broiler for 1 to 2 minutes.  Makes 6 to 8 servings.
