Crock pot stew meat and kidney beans is an easy recipe and good comfort food.   You could use just about any meat such as a roast or round steak.  I think chicken would even work in this dish. You might like to check out our recipe for crock pot cream cheese ranch chicken.  This would be great to serve to a crowd or to have at any gathering of family and friends.

1/2 pound dried red kidney beans
1 cup water
2 cups chicken broth
3 carrots, scraped and cut in bite-sized pieces
1 small onion, peeled and chopped
1 to 1 1/2 pounds beef stew meat
2 tablespoons cooking oil
1 (14.5 ounce) can diced tomatoes, undrained
1/2 teaspoon salt
1/2 teaspoon black pepper
1/4 teaspoon garlic powder
1 teaspoon dried oregano
1/4 teaspoon thyme
1 bay leaf
Shredded cheese for garnish
Brown stew meat in cooking oil on top of the stove.  Add to crock pot along with remaining ingredients.  Cook on low for 6 to 7 hours or high for 3 to 4 or until meat is tender. Remove bay leaf.  Serve over pasta, rice or potatoes. Garnish with your favorite shredded cheese.   Makes about 8 servings.  Enjoy!
