CROCK POT CHUCK WAGON SUPREME
Chuck wagon supreme is a hearty meal your family will fall in love with. Perfect comfort food and very versatile! You can make this in a dutch oven, as a casserole or in a skillet. We prefer the crock pot, put together on a busy day and enjoy when you get home! You might also like our recipe for crock pot jambalaya.
Crock Pot Chuck Wagon Supreme is great comfort food.
1 lb of ground beef
1 (15.5 ounce) can of black beans, rinsed and drained
1 (10 ounce) can of MILD Rotel Tomatoes (use hot, if you like spicy food)
1 (14.5 ounce) can of chicken broth
1 bag of small Honey Gold Potatoes, chopped (you can use any potatoes)
1 cup of white onion, chopped
1 tablespoon of minced garlic
shredded cheese
sour cream
pepper to taste
Brown ground beef in skillet with chopped onion, minced garlic and pepper. I used about 10 of the small potatoes, chopped to bite size pieces. Put those in the bottom of the crock pot, then top with ground beef mixture, next black beans and then Rotels. Pour the can of chicken broth over the mixture and cook on low for 7-8 hours, low for 4-5. I stirred it a few times, just to make sure the potatoes weren’t sticking to the bottom of the crock pot. Top each serving with shredded cheese and sour cream. Enjoy!
*Note: I used extra lean ground beef, so I didn’t have to drain it. If you have extra grease in your beef mixture drain it before adding it to the crock pot.
I also used this Crock Pot for this recipe, it is 4 quart and it was full.

I added a bag of frozen corn. Next time I will try a can of Glory or
Margrate Holmes Southern corn.
Thanks Karen for the comment. We are not nutritionist, we are just cooks. We wouldn’t feel right giving out that type of information, however there are MANY websites online you can use that will calculate that information for you.
If you are cooking with beef, why is chicken broth used and not beef broth?
You can use either. Doesn’t matter. You won’t be able to tell much difference.
This meal is one I make frequently and share the recipe often. Love it! Once when I was making it I was out of black beans and subbed with green beans instead and it was delicious as well. Thanks for the great recipe!
You’re very welcome! The addition of green beans sounds delicious.
How many pounds of potatoes? Just says bag
Hello April, here is the bag I used. You can decide how many potatoes you want to put in the crock pot. https://www.walmart.com/ip/Tasteful-Selections-Honey-Gold-Potatoes-40-oz/23555079
YUM
Love your recipes also but my husband is on a LOW sodium diet now. The doctor has told him nothing out of a can. Have found some tomatoes that say no salt added but they have some sodium. We don’t eat the same things now.
Thank you for the great recipes. Comfort food, and easy. Appreciate
You’re very welcome! Enjoy!
