Pimento cheese macaroni salad is easy and delicious.

Pimento Cheese Pasta Salad

Pimento cheese macaroni salad is wonderful to take to any event or for any occasion.  This salad is good anytime.  My family can’t get enough of anything that is made with pimento cheese or tastes like pimento cheese.  We love the smoked paprika in this salad and think it is a great addition that makes this recipe.  I never thought I would say it but my family loves this salad as much as they do potato salad and for years I made potato salad for every family gathering.  This one is easier to make because you don’t have to peel all the potatoes that go in making potato salad. I think this salad is better if you make it a day ahead of time and give the ingredients time to marry.  It keeps well several days refrigerated.

Pimento cheese pasta salad will quickly become a favorite.

6 eggs, boiled and peeled

2 cups uncooked macaroni

1 (4 ounce) jar chopped pimentos, drained

1 cup chopped green onions, divided

2 teaspoons celery seeds

1 tablespoon white granulated sugar

1/2 teaspoon black pepper

1 teaspoon salt

1/4 teaspoon garlic powder

1 cup mayonnaise

1 1/2 teaspoons smoked paprika, divided

1 tablespoon apple cider vinegar

2 cups shredded cheddar cheese

Boil the eggs, peel and chop.  Cook the macaroni according to package directions (I cook mine for 8 minutes) and drain. Drain pimentos.  In a large mixing bowl, combine eggs, macaroni, pimentos, 3/4 cup of the chopped green onions, celery seed, sugar, black pepper, salt, garlic powder, mayonnaise, 1 teaspoon of the smoked paprika, apple cider vinegar and mix all together with a spoon.  Fold in the shredded cheese.  Sprinkle 1/2 teaspoon smoked paprika on top of salad along with 1/4 cup of chopped green onions.  Chill for several hours or overnight.  Makes about 8 cups of salad.  Enjoy!

Note:  I boiled 7 eggs instead of six and used the extra one for garnish on top of the salad along with the extra onions and paprika.
