Pimento cheese macaroni salad is wonderful to take to any event gathering.    My family can’t get enough of anything that is made with pimento cheese or tastes like pimento cheese.  The addition of the smoked paprika adds a fantastic flavor.  I never thought I would say it but my family loves this salad as much as potato salad and for years I made potato salad for every family gathering.  The positive is that this dish is a bit easier to make because you don’t have to peel potatoes like you do when you make potato salad.

Pimento Cheese Macaroni Salad Ingredients

Eggs

Elbow macaroni, uncooked

Jar of chopped pimentos, drained

Chopped green onions

Celery seeds

White granulated sugar

Black pepper

Salt

Garlic powder

Mayonnaise

Smoked paprika

Apple cider vinegar

Shredded cheddar cheese

Recipe Notes:  I boiled 7 eggs instead of six and used the extra one for garnish on top of the salad along with the extra onions and paprika. I think this dish is best when made a day ahead of time. It gives the ingredients time to marry and become much more flavorful.

Ingredients
 

  • 6 eggs boiled and peeled
  • 2 cups uncooked macaroni
  • 1 4 ounce jar chopped pimentos, drained
  • 1 cup chopped green onions divided
  • 2 teaspoons celery seeds
  • 1 tablespoon white granulated sugar
  • 1/2 teaspoon black pepper
  • 1 teaspoon salt
  • 1/4 teaspoon garlic powder
  • 1 cup mayonnaise
  • 1 1/2 teaspoons smoked paprika divided
  • 1 tablespoon apple cider vinegar
  • 2 cups shredded cheddar cheese

Instructions
 

  • Boil the eggs, peel and chop. Cook the macaroni according to package directions (I cook mine for 8 minuteand drain. Drain pimentos. In a large mixing bowl, combine eggs, macaroni, pimentos, 3/4 cup of the chopped green onions, celery seed, sugar, black pepper, salt, garlic powder, mayonnaise, 1 teaspoon of the smoked paprika, apple cider vinegar and mix all together with a spoon.
  • Fold in the shredded cheese. Sprinkle 1/2 teaspoon smoked paprika on top of salad along with 1/4 cup of chopped green onions. Chill for several hours or overnight.
