HAM, CHEESE AND POTATO FRITTATA
Frittata is an Italian dish with eggs similar to an omelette.
This ham, cheese and potato frittata is a recipe your family can enjoy time and time again. Super simple and you will be in and out of the kitchen in no time! Perfect for a busy week, make this on a Sunday and your breakfast is ready for the entire week. Breakfast is a favorite meal at our house and we are always looking for simple morning meals.
This frittata recipe is quick and easy.
1lb of diced ham
1/2 cup of chopped onion
1/2 cup of cheese of choice
1 cup of milk
2 cups of chopped potatoes (I used frozen hashbrowns I had on hand)
6 eggs
salt and pepper to taste
Preheat oven to 350. In medium or large oven safe skillet, add ham, onion and potatoes and cook for about 4-5 minutes. In separate bowl, add 6 eggs and milk and whisk together until blended. Throw a little cheese over the ham, onion, potato mixture and then pour eggs and milk over all ingredients in skillet. Top with the remaining cheese. Cook in oven for 35-40 minutes, this time may vary depending on different ovens.
Frittatas are such great dishes, perfect way to use your veggies! For an even a healthier option leave out the potatoes and load up with green vegetables. I plan to try sausage, spinach and mushroom next. Enjoy!
