Carrot Cake Cookies

These chocolate butterscotch carrot cake cookies are made with cake mix.  They are very easy to make with just a few additions to the mix and turn out so chewy and good! Children as well as adults will love these cookies.  They are wonderful with coffee and make a great snack with a glass of milk.  These cookies make a great gift for a friend or neighbor. They keep well in an airtight container and you could double the recipe if you want to make more.  Let your children or grandchildren help you to make these cookies and then enjoy how good they are together.   You might also like to try our recipe for snickerdoodle cake mix cookies.

Butterscotch carrot cake cookies are easy and delicious.

1 box supermoist carrot cake mix with pudding in the mix
2 eggs
1/2 cup oil (I used canola)
1/2 cup walnuts, chopped
1/2 cup chocolate chips
1/2 cup butterscotch chips
1/2 cup raisins
 
In a large bowl using a spoon mix together the cake mix, eggs, and oil.  Fold in walnuts, chips, and raisins.  The mixture will be thick.  With your hands make balls the size of walnuts and press onto ungreased cookie sheet.  Bake in preheated 375 degree oven for 12 to 15 minutes. Makes about 2 1/2 dozen cookies depending on size you make them.

  1. These look wonderful and easy. As soon as grocery store opens from overnight issues from Hurricane Matthew passing by South Florida during the night, plan to get ingredients and make these to celebrate our great good fortune not to have had it worse. For next hours still worried about those north of us…….

    Back to the mundane, I don’t have a green printer icon, or any printer ability. I’m using Mac with Safari browser. Would love this ability. Am very excited about many recipes on your site. Thank you for the great food.

If you can see the Facebook, Twitter and Pinterest icons at the bottom of the page, the printer icon is right next to them and is green with the picture of a printer inside. Otherwise, try copying and pasting into an e-mail and then print maybe. Good luck to you and everyone in the path of this storm. Praying for everyone.
