CHOCOLATE BUTTERSCOTCH CARROT CAKE COOKIES
These chocolate butterscotch carrot cake cookies are made with cake mix. They are very easy to make with just a few additions to the mix and turn out so chewy and good! Children as well as adults will love these cookies. They are wonderful with coffee and make a great snack with a glass of milk. These cookies make a great gift for a friend or neighbor. They keep well in an airtight container and you could double the recipe if you want to make more. Butterscotch carrot cake cookies are easy and delicious.
1 box supermoist carrot cake mix with pudding in the mix
2 eggs
1/2 cup oil (I used canola)
1/2 cup walnuts, chopped
1/2 cup chocolate chips
1/2 cup butterscotch chips
1/2 cup raisins
In a large bowl using a spoon mix together the cake mix, eggs, and oil. Fold in walnuts, chips, and raisins. The mixture will be thick. With your hands make balls the size of walnuts and press onto ungreased cookie sheet. Bake in preheated 375 degree oven for 12 to 15 minutes. Makes about 2 1/2 dozen cookies depending on size you make them.
