They keep well in an airtight container and you could double the recipe if you want to make more.  Let your children or grandchildren help you to make these cookies and then enjoy how good they are together.   You might also like to try our recipe for snickerdoodle cake mix cookies.

Butterscotch carrot cake cookies are easy and delicious.

1 box supermoist carrot cake mix with pudding in the mix

2 eggs

1/2 cup oil (I used canola)

1/2 cup walnuts, chopped

1/2 cup chocolate chips

1/2 cup butterscotch chips

1/2 cup raisins

In a large bowl using a spoon mix together the cake mix, eggs, and oil.  Fold in walnuts, chips, and raisins.  The mixture will be thick.  With your hands make balls the size of walnuts and press onto ungreased cookie sheet.  Bake in preheated 375 degree oven for 12 to 15 minutes. Makes about 2 1/2 dozen cookies depending on size you make them.

These are great for the holidays or just anytime.  Enjoy!
