Banana Chocolate Chip Muffins The Southern Lady Cooks

Muffins are always a hit in my family and I am always looking for something to do with bananas. We love muffins with our morning coffee and this recipe is so easy because you don’t have to get out the mixer. I just mix these Banana Chocolate Chip Muffins up and serve hot from the oven for a treat on the weekends or just anytime. They keep well refrigerated or in a cool place. Just reheat in the oven or microwave and slather with some butter.

2 cups all-purpose flour
1/2 cup white granulated sugar
1/2 teaspoon salt
1/2 teaspoon baking soda
1 teaspoon ground cinnamon
1 stick butter or 8 tablespoons or 1/2 cup, melted
1 cup sour cream
2 eggs
1 teaspoon vanilla extract
2 medium bananas, peeled and mashed
1/2 cup chocolate chips
1/2 cup chopped pecans or walnuts, Optional

 

Whisk together the flour, sugar, salt, baking soda and cinnamon in a large bowl. Add melted butter, sour cream, eggs and vanilla extract. Mix well with a spoon. Fold in mashed bananas and stir. Fold in chocolate chips and nuts and make sure all ingredients are mixed together. Spray a 12 cup muffin pan with cooking spray and fill cups to the top. Bake in preheated 350 degree oven for 35 to 40 minutes until centers test done. Let cool 10 minutes and remove from muffin tins. Makes 12 large muffins. Enjoy!
