ASPARAGUS BACON SALAD – LIGHT RECIPE

TSLCAsparagusSalad1

This Asparagus Bacon Salad is one of our favorites. It is a healthy salad made with fresh vegetables. Wonderful in summer to use up vegetables from your garden and a salad you will make over and over again. I love this salad with the dressing recipe below. The salad keeps a couple days in the refrigerator and you can use your imagination and add other ingredients you like.

1 pound fresh asparagus spears, trimmed
cooking spray
salt and pepper
3 – 4 pieces bacon, cooked and broken into pieces
1 small onion, cut in rings
1 medium tomato, chopped
1 cup baby spinach, chopped
1/2 cup chopped nuts, walnuts or pecans
1 cup raisins, (optional)

Trim the asparagus spears and spread out on baking sheet. Spray with cooking spray and sprinkle with salt (can use sea salt) and black pepper. Bake in preheated 375 degree oven about 10 minutes until tender or to your liking. Combine bacon pieces, onion rings, tomato, spinach, nuts and raisins in salad bowl. Cut asparagus into pieces and add. Toss all ingredients together.
You can add more salt and pepper to taste if you like. You could also add boiled eggs or apples to this salad. We love this salad with the dressing below.

Salad Dressing for Asparagus Bacon Salad

1 tablespoon lemon juice (fresh or bottled)
2 tablespoons olive oil
2 tablespoons red wine vinegar
1/4 teaspoon garlic powder (can use fresh garlic, minced, about one clove)
1 teaspoon spicy brown mustard or Dijon
1 teaspoon dried basil (can use fresh chopped)
2 tablespoons honey
1/8 teaspoon black pepper
Salt to taste

This makes about 1/2 cup. You can double the recipe if you like it. Keeps well in fridge. I like this dressing with other salads, too. You can add this to entire salad if serving for a meal or let each person sprinkle on individual salad. This is a great gluten free addition to any meal!

That asparagus salad sounds delicious.. As for Bacon, my husband loves American Bacon.. I live in Australia, but born and raised American.. He would love your home cured bacon, that you had in your childhood.. Thank you for the recipe.. Sounds great…
