MAPLE BACON SWEET POTATOES

Maple bacon sweet potatoes is a recipe that is so easy to make and will become one of your favorite side dishes.  The bacon and maple syrup together makes for a wonderful roasted taste your family and friends will love when you serve this dish to them.  You can double this maple bacon sweet potatoes recipe.  It is easy to reheat in the microwave and keeps several days in the refrigerator. The spices for these roasted sweet potatoes can be varied and you can use whatever you like.  You could add other vegetables to this recipe such as onions, green peppers, etc. My family likes sweet potatoes and I serve this often because I can have it ready in little or no time on a weeknight or anytime I need something in a hurry.  You might also like my recipe for sweet potato cobbler.

2 large sweet potatoes, peeled and cubed.

2 tablespoons olive oil

4 tablespoons maple syrup

1/2 teaspoon ground cinnamon

3 to 4 strips raw bacon cut into small pieces

Salt and Pepper to taste

Combine the oil, maple syrup, ground cinnamon and bacon pieces in a bowl.  Toss potatoes in the oil and syrup mixtures.  Spread sweet potatoes on a sprayed baking sheet or one covered with parchment paper.  Make sure your baking sheet has sides so drippings will not run over in your oven.   Bake in a preheated 350 degree oven for 35 to 40 minutes or until potatoes test done.
