These cheese muffins are a great breakfast treat on the weekend or just anytime.  The bacon plus the cheese in the recipe make them delicious and special. Your family will love these.

2 1/2 cups self-rising flour
2 teaspoons sugar
2 cups buttermilk
1 egg
2 tablespoons bacon drippings or oil
1 cup sharp cheddar cheese, shredded (could use whatever cheese you like)
5 slices bacon, cooked crisp and crumbled
Cook bacon and set aside. (I cook mine in the microwave)  Mix together flour, sugar, buttermilk and egg with a spoon.  Add drippings, cheese and crumbled bacon.  Spray a 12 cup muffin tin well.  Fill cups about half full. Cook in preheated 400 degree oven 25 – 30 minutes until done and golden brown on top.   Makes 12 muffins.   Enjoy!

  2. I was wondering if you could make the recipes more printer friendly. I want to print a lot of them but because of all the pics, which uses a lot of ink I won’t. So I try to store them instead then forget were I have them stored.

  4. I made these this morning for breakfast…..i used smoked gouda cheese and a little more bacon….they were wonderful….a big hit with the whole family….yummmm
