These cheese muffins are a great breakfast treat on the weekend or just anytime. The bacon plus the cheese in the recipe make them delicious and special. Your family will love these.2 1/2 cups self-rising flour 2 teaspoons sugar 2 cups buttermilk 1 egg 2 tablespoons bacon drippings or oil 1 cup sharp cheddar cheese, shredded (could use whatever cheese you like) 5 slices bacon, cooked crisp and crumbled Cook bacon and set aside. (I cook mine in the microwave) Mix together flour, sugar, buttermilk and egg with a spoon. Add drippings, cheese and crumbled bacon. Spray a 12 cup muffin tin well. Fill cups about half full.
